Puddledub have a new recruit in the form of Team GB Butcher Mark Ramsay. Joining the team just before Christmas from Falleninch Farm, Stirling, Mark has brought a wealth of butchery experience with him. He was selected and competed for Team GB in the World Butcher Challenge in 2018 and continues as a member of the team today.
"I'm enjoying working with the Puddledub team. As more consumers are taking greater interest and consideration on where their meat is coming from, Puddledub has a great reputation and lots of offer those looking to buy their meat online or from a local butcher shop".
"People are looking for full traceability these days so it's great to be at Puddledub where we can provide that" states Mark. "The better quality and the better flavour all help".
"It's a great time to be a butcher right now, social media has played a big part in that. People have much greater access to finding our where their food is coming from. It's changed a lot from being just a butcher with mince and chops. There's now so many different products available" enthuses Mark.
"My favourite dish is a nice steak, probably Ribeye, cooked medium rare with a wee bit of fat on it. Cooking wise I'd reverse sear it by putting it in the oven first and then finishing it off in the pan" recommends Mark.
